Omelet Muffins

This breakfast dish is very easy, especially if you have silicone baking cups.
Omelet Muffins (6)
4 eggs, whisked
3 slices of ham, cut up
6 Tblsp chopped spinach, cooked and drained of excess liquid
Shredded cheese

Place silicone baking cups in a muffin pan. (Alternatively, grease the muffin tins if you do not have baking cups).
Add some of the cut up ham to the cups then add the spinach and whisked egg and top with the shredded cheese.
Bake at 375⁰F for 15-20 minutes or until the eggs are set. Pop each “muffin” out of the baking cup before serving.
These "muffins" have endless possibilities since you can use any meat and any vegetables you wish or have on hand. Just make sure that the vegetables have been cooked in advance and that any excess liquid has been drained off.
