Lentil Soup in the slow cooker

This is a great dinner; it is easy, it is cheap and it is good! In fact, both my girls claim this is their favorite soup! The recipe is based on the one you find on the bag of lentils.


Lentil Soup in the slow cooker

1 lb lentils, rinsed and sorted

8 cups warm water (you can use broth but water works great)

1-2 large carrots, chopped in small dice

2 medium stalks celery, chopped in small dice


1/4 - 1/2 medium onion, chopped in small dice

2 slices bacon, chopped in small dice

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Combine all the ingredients in a slow cooker and let it cook on low for however many hours you have, anywhere from 5 and up is fine.

Once the soup is done, simply stir it up, season it with salt and pepper and enjoy! 

If you want an even more flavorful soup you can add onion, garlic, chopped tomatoes, or more bacon.

This also tastes great the next day and it freezes well; it is perfect for one of those days when you just did not get around to dinner planning. Simply portion it out in zip-lock bags, freeze them laying flat and that way it will thaw very quickly when you need it.
