HeartyTurkey Meatballs

The inspiration for my turkey meatball recipe comes from a recipe for Hearty Turkey Meatloaf which I found in Joy Bauer's book Food Cures

Below you find my modified recipe. Enjoy!

Hearty Turkey Meatballs

Ingredients

- 1 lb lean ground turkey (or beef or chicken)

- 2 medium sized carrots, (peeled and minced or finely shredded)

- 1 cup quick oatmeal (can be GF)

- 1/2 - 3/4 cup finely chopped white mushrooms

- 1 Tblsp dried basil


- 2 Tblsp reduced-sodium soy sauce (can use GF alternative)

- 1 egg (or 2 egg whites)

- 2-3 cloves of garlic, minced

- 1/2 tsp dried thyme

- 1 tsp oregano

- salt and pepper (if needed)


Directions
 - In a large bowl add ground meat, oats, basil, soy sauce, egg, thyme and oregano. 

-  In a food processor, finely chop carrots, garlic and mushrooms and add to the meat.

**If you do not have a food processor then finely chop the mushrooms by hand, shred the      carrots on a fine grater and mince the garlic using a garlic press or a knife

- With your hands, mix all the ingredients together until well combined.

- Line a cookie sheet with foil and brush it with oil (or spray with cooking spray).

- Using either a table spoon and your hand, or a small ice-cream scoop to form meatballs 
  and place them on the cookie sheet. 

- If you are cooking the meatballs right away then space them about 1/2 inch apart and 
  bake in a 375 degree oven for 20-25 minutes
**until internal temperature reads 165 degrees for poultry and 160 degrees for beef**

- If you are making a large batch to freeze then place the meatballs right next to each 
  other on the cookie sheet. Once you are done, place the entire cookie sheet into the 
  freezer and once the meatballs are frozen solid you can easily take them off the foil and
  place them into baggies to cook later. 

**When you are pulling meatballs from the freezer to use, make sure to thaw meatballs       completely before cooking them!!

You can also make this into 1 meatloaf in a 1lb loaf-pan, cooking it at 350 degrees for 40-50 minutes. Check temp!
