A friend of mine sent me a recipe for Flourless Chocolate Chip Chickpea Blondies with Sea Salt from Ambitious Kitchen and I made them for dessert yesterday. I am in love!!
The recipe is grain-free and gluten free and it can be dairy free, corn free and egg free etc. but what it lacks in ingredients it makes up for in flavor, gooey-ness and deliciousness! And, it is actually pretty healthy too so I hope you give it a try :)
Flourless Chocolate Chip Chickpea Blondies
Ingredients
Cooking spray (or butter if not dairy free)
1 can (15oz) chickpeas, rinsed and drained
1/2 cup all natural almond butter or other nut-butter (I used almond)
1/3 cup pure maple syrup (or honey, or agave or your pick)
2 teaspoons pure vanilla extract
1/2 tsp salt
1/4 tsp baking powder (can be corn free)
1/4 tsp baking soda
1/3 cup + 3 tblsp chocolate chips (regular, vegan, dairy free or whatever you can eat)
Sea salt, for sprinkling (I forgot this and they were delicious without too)
Directions
- Preheat the oven to 350 degrees F and grease an 8" x 8" pan
- In a food processor, add all the ingredients except the chocolate chips and sea salt and
process until the batter is pretty smooth
(if you don't have a food processor, take a look here for an alternative method)
- Fold in the 1/3 cup chocolate chips
- Spread the batter evenly in the prepared pan and sprinkle the rest of the chocolate
chips on top
- Bake for 20-25 minutes until a toothpick comes out clean and the edges are light golden
(it may look under cooked but if you cook it too long it will dry out)
- Cool the pan on a wire rack and sprinkle the top with sea salt
- Once cool, cut into 16 squares
(If you let it cool completely, you can even cool it in the fridge, it is much easier to cut)

**I am going to experiment with a couple of different kinds of "butters" and also with
sprinkling brown sugar on it before baking. I will let you know how that works out.
